Spätzle - Authentic and Super Easy!

I have tried many recipes over the years in the hopes of returning home with some delicious traditional German dishes.  Sauerbraten, rouladen, kartoffelpuffer and a variety of breads.  Not many have been as successful as Spätzle!  This dish is super easy, has only a few ingredients, and your kids will love it.  It’s very versatile, can be served with almost anything, and you can whip up a large batch of fresh Spätzle in 10 minutes.

First, get yourself a Spätzle maker.  Back in the day, they made these delicious little noodles by hand…but today, there is a great tool that resembles a cheese grater that does the job.  Here is the one that I have, and it’s available on amazon.de or amazon.com for under $20.00.

The recipe! There are only four ingredients - milk, flour, salt, and eggs. Just throw the ingredients in a bowl and mix. It will create a nice thick batter that will sit and strain through the Spätzlemaker beautifully.

1 cup all purpose flour

1/4 cup milk

1 teaspoon salt

2 eggs


Have a pot of simmering hot water on the stove for the Spätzle. Pour your batter in the Spätzlemaker and move back and forth, allowing the batter to drop into the simmering water. Let it sit in the water for about 5-6 minutes. The pasta will float to the top when it’s ready. Drain the noodles and then toss them in a nice hot pan with some butter…and that’s it! Some people love this with a little nutmeg, which you can add to the batter. Or, sprinkle some shredded cheese on a nice hot plate the pasta dumplings.
